Want rice or couscous without the carbs? Try this recipe, it’s delicious.
Ingredients
- 500 g cauliflower chopped coarsely
- 100 g onion chopped finely #1
- 20 g butter
- 10 g oil, olive or coconut oil
- salt to taste
- pepper to taste

Instructions
- Add butter, oil and onions and sauté for 2 minutes at 100°C on speed 2.
- Add seasoning and cauliflower into the TM bowl and chop for 5 - 10 seconds on speed 5 (until it resembles rice grains or couscous).
- Insert Butterfly#2 and sauté for 5 - 10 minutes at 100°C on Reverse + speed soft.
Recipe Notes
#1 You can use the Thermomix to chop the onion if you like, but personally I've never had to much luck with it. Unfortunately it releases to much liquid when it gets chopped to the fineness I would like it to be. The best results I've ever had were chopping for ~5 seconds speed 7.
#2 You can cook this dish without the Butterfly, using Reverse + speed 2.
